Healthy, Easy, HK Style Baked Seafood on Rice
Hong Kong style creamy baked seafood on rice, but healthier and just as tasty and comforting!

- 1 tbsp butter
- 1 small onion diced
- 3 cup cooked rice cold/leftover rice
- 1/2 cup egg whites
- 1/3 cup shredded cheese
Seafood Marinade
- 2 cups seafood thawed and cut into smaller pieces, if needed (shrimps, scallops, fish filet, mussels etc)
- 1/4 tsp white pepper
- 1/2 tsp salt
- 1/4 tsp sugar
- 1 tbsp cooking wine
Cottage Cheese Cream Mixture
- 1.5 tbsp cornstarch
- 1/2 cup milk or almond milk (unsweetened)
- 1.5 cup cottage cheese
Preheat oven to 400F. In a small bowl, add ingredients for "seafood marinade".
Blend ingredients for "cottage cheese cream mixture" until smooth.
Line a 8x8 baking dish with parchment paper. Add rice and stir-in egg whites. Create an even layer of rice.
In a sauce pan, melt butter. Saute onions until softened on medium high heat.
Turn heat to low. Add blended cottage cheese and seafood. Cook until sauce is warmed. Do not boil sauce or it will curdle.
Pour seafood sauce over rice. Top with cheese.
Bake for 25 minutes (or until seafood is cooked). Enjoy!
