- 4 medium tomatoes cut into 5-6 wedges, each
- 3 large eggs
- 1/3 cup egg whites
- 1/4 cup water
- 2 tsp oil
Tomato Sauce
- 3 tbsp ketchup
- 2 tsp corn starch
- 1/2 tsp sugar
- 1/4 tsp ginger powder
- 1/2 tsp salt
- 1/2 cup water
In a small bowl, combine ingredients for tomato sauce mixture.
In a medium bowl, whisk whole eggs and egg whites together.
Heat non-stick frying pan over medium-low heat. Add 1 tsp oil and egg mixture. Run spatula across pan continuously to scramble eggs. Eggs should look glossy and wet. Remove eggs from pan.
Turn heat to medium high, add 1 tsp to frying pan and add tomatoes and water. Cook until tomatoes have softened, about 4-5 minutes
Add tomato sauce mixture and simmer until sauce thickens, about 3-4 minutes.
Turn off heat. Fold eggs into tomato sauce mixture. Enjoy!
