This easy Chinese tomato and egg recipe is so delicious and best of all, it’s healthy because it’s high protein, lower in cholesterol and calories- but doesn’t taste like it at all.

It uses just a few simple main ingredients- tomatoes, eggs, egg whites, and ketchup.

Whole eggs mixed with egg whites lowers the calories and cholesterol content while increasing the protein and bulk- and I bet you can’t tell the difference once it’s cooked because we couldn’t.

The eggs are pillowy soft and fluffy, while combined with a saucy, savory tomato sauce.

My husband doesn’t like tomatoes but he ate them all in this recipe because he said it’s tasty and not sour tasting in this dish.

Did you know that tomatoes and eggs provide umami? They naturally contain glutamic acid (an amino acid), which gives food umami flavor.

Mushrooms, miso, parmesan cheese, soy sauce, and fish sauce are some other foods that are high in glutamic acid, so it gives off natural umami.

This recipe is so comforting, it’s perfect on rice for an easy weekday meal.

The recipe makes 2 large servings.

Equipment

  • Frying pan non-stick

Ingredients
  

  • 4 medium tomatoes cut into 5-6 wedges, each
  • 3 large eggs
  • 1/3 cup egg whites
  • 1/4 cup water
  • 2 tsp oil

Tomato Sauce

  • 3 tbsp ketchup
  • 2 tsp corn starch
  • 1/2 tsp sugar
  • 1/4 tsp ginger powder
  • 1/2 tsp salt
  • 1/2 cup water

Instructions
 

  • In a small bowl, combine ingredients for tomato sauce mixture.
  • In a medium bowl, whisk whole eggs and egg whites together.
  • Heat non-stick frying pan over medium-low heat. Add 1 tsp oil and egg mixture. Run spatula across pan continuously to scramble eggs. Eggs should look glossy and wet. Remove eggs from pan. 
  • Turn heat to medium high, add 1 tsp to frying pan and add tomatoes and water. Cook until tomatoes have softened, about 4-5 minutes
  • Add tomato sauce mixture and simmer until sauce thickens, about 3-4 minutes.
  • Turn off heat. Fold eggs into tomato sauce mixture. Enjoy!
