Make this easy 5 minute spicy tuna bowl. It’s huge and filling- perfect for a quick lunch or dinner.

We have been eating this for the past few weeks for lunch and it never fails to satisfy!

This recipe is easy and basically no cook since it uses instant microwave sticky rice, canned tuna, edamame, cucumber, mayo, and sriricha- all the ingredients in a spicy tuna roll!

It’s so good wrapped in roasted seaweed.

Tuna is a great low calorie and high protein, no cook protein! 1 entire can of tuna (skipjack in water)  is just 120 calories and has 26 g of protein!

I used this pre-cooked sticky rice that I got from Costco. Surpringly it turned out really good- my husband and I were impressed that it tastes like freshly cooked sticky rice….except it just takes 90 seconds to heat up in the microwave! It’s so convenient and tasty!

I also used light mayo instead of regular mayo. Light mayo tastes pretty much 99.5% the same as regular mayo (in my opinion) and is only 1/3 the amount of calories! Light mayo is just 35 calories per tablespoon vs 100 calories for regular mayo. 

Shelled edamame is also a great addition to this spicy tuna bowl because it adds fiber and protein. I buy the frozen shelled edamame that you can just microwave with water to heat up- so easy!

5 Min Spicy Tuna Bowl (Easy and Healthy!)

  • 1 microwave

Ingredients
  

  • 1/2 cup edamame
  • 1 bowl instant sticky rice I used Bibigo brand from Costco
  • 3 tbsp light mayo
  • 1 can tuna in water drained (I used skipjack)
  • 1 green onion chopped
  • 1/3 cup cucumber diced
  • sriracha sauce
  • furikake option

Instructions
 

  • Add edamame into a microwave safe bowl. Add 1/2 cup water and microwave for 3 minutes. Drain and rinse under cold water.
  • Heat rice as per instructions (tear film up to dotted line and microwave for 90 seconds). Remove seal and let cool.
  • Mix rice, tuna, edamame, mayo, cucumber, green onions until combined. Top with sriracha and furikake (optional). Enjoy with roasted seaweed!
