
Who says you can’t eat cookies for breakfast?
This easy, one bowl, 2 minute prep breakfast cookie is so good. I’ve been making it everyday for the past week because we love it so much and it’s so easy to whip up. I just bake it in the air fryer for 10 minutes while I get ready in the morning. It’s so moist.
And guess what? It’s packed with protein. I’ve been testing to see how I can bake with protein powder because I hate the taste of protein powder and I haven’t been able to come up with a recipe using protein powder until this one. I can’t taste any protein powder in this cookie!
Each cookie is only 125 calories, 7g protein!
Enjoy 2 cookies with yogurt and fruit for breakfast or have a cookie as a snack.

It’s just 4 main ingredients together:
-Banana for natural sweetness and moisture
-Oats, I used quick oats
-Baking powder
-Protein powder. I used chocolate protein powder because that’s what my husband eats and so that’s what we had at home, but you can use any flavor
….And oil

You can also add other toppings like chocolate chip, raisins, or nuts but it doesn’t really need it.
I found it plenty sweet on it’s own, filling, and pretty hearty.

The recipe makes 2 cookies- fitting perfectly in the air fryer.
And, one cookie is huge! It’s almost the size of my entire hand!
My husband asked me for the past few mornings if there were any of these cookies left for breakfast because it tastes good. It’s definitely on my regular rotation.

10 Minute Air Fryer High Protein Breakfast Cookie Recipe
Ingredients:
1 small banana
1/3 cup quick oats
1/2 scoop protein powder (I used chocolate)
1 tsp baking powder
2 tsp oil
Additional toppings (chocolate chips, nuts, raisins, etc)
Instructions
1. Preheat air fryer to 350F (175C).
2. Mash banana with a fork.
3. Add remaining ingredients to banana mixture and stir to combine.
4. Line air fryer with parchment paper. Make 2 cookies and add toppings.
Air fry for about 7-8 minutes, until browned.
